Berkshire Spareribs St. Louis cut.

Liberally coated with Okie Dust and allowed to soak into the meat for a few hours.

Six Points 100% Berkshire Natural 3 bone Short Ribs.

These take a long time to cook and I wanted to serve them alongside the spares, so I trimmed the top cap and fat layer.

Loaded up Eggright with some Real Montana Charcoal Co. Cherry Lump (see Naked Whiz Charcoal Database)

Just a touch of Honey Powder, light dusting of Okie Dust and spritzed with Apple juice and they form a nice sweet glaze!

Nice and tender, sweet glazed appearance. No sauce on mine, I set some out, but nobody needed it! It's that good!

Super pix Brian! How do oyu like the Berkie spares? I have had trouble finding any that have any real meat on the St louis part of the bone.

Can you tell us more about the other cut? Is it kinda like the first three ribs with some shoulder meat left on it?

And the weather is going to be perfect for a few days. And to top it off ribs are on sale. Can't verify Berkshire or Yorkshire but I gotta start with something. :sign0092: for a great thread.
