View Full Version : Sweet Potato Cornbread

Cornbread is one of my favorite sides with BBQ.....well, with just about anything, so when I saw a recipe for sweet potato cornbread, I had to give it a shot.

Recipe called for white cornmeal mix, but all I had was yellow, so I went with it. I suspect the only difference would be in the final color of the bread.

Mix the dry ingredients - 2 C self-rising cornmeal mix, 3 Tbs sugar, 1/3 tsp pumpkin pie spice

Then the wet - 5 large eggs, 2 C mashed sweet potatoes, 8 oz sour cream, and 1/2 C melted butter.

Combine the wet and dry.

I gave my 10" CI pan a good rub down with bacon grease and let it preheat in the oven as the temp came to 425. When the pan got hot, poured in the mix.

After 35 minutes it was done

Flipped it out of the pan and onto a plate

Cut out a good size wedge and got after it.

The potato added a nice flavor that was not over powering, but made for a nice change from straight up cornbread. The texture is what really won me over though. Not as gritty as a classic southern bread, but not like a piece of cake like they try to pass off as cornbread up here in the NE.

Definitely a recipe I am going to keep around.

I have to give this a try, I don't much care for cornbread because of the texture, and the sweet potatoes are cheep here.....

I'm a cornbread fan, but not so much a sweet tater fan. But this might work even for me!
