What would be the best wood chips for smoking spatchcock chicken?

I like using apple chunks and cherry chips together when cooking chicken.

Pecan is my all around fave for anything. Hickory too. Never tried cherry, but many have told me it's hands down best for chix. I can vouch for apple; it's great on chix. And don't let ol' PigSucker talk you out of chicken! Give him one of these::smack: and these: :misbehaving: and these: :moon:

What is alder i don't think that I have seen that what does that wood smell like

along the same lines.....

do you guys peel the bark off??

i noticed a slight bitter taste if i put the meat on too soon and there is bark on the wood still..ruined a salmon filet or two

i have noticed cherry gives a really great color

i tend to use apple for most everything, but toss in a chunk of other woods when i come across them...never used pecan or peach or hickory.

my best advice use what is local ..spotted alder is great for fish, so i suspect it would work for anything, Native Americans used it here locally...
