Had some left over charcoal in the fire box but not much, so I decided to smoke a little steelhead. Thought I'd share it with you.

One nekked steelhead fillet

A little Blueshog rub, Hatch chile, home smoked and ground chipotle, with just enough lime juice to help it soak in

Then add the honey

About 40 minutes @ 250 with some Mulberry wood, back onto the platter, and it looks like this

That looks pretty good. The fillets we get around here in my boat have to be cut in half to fit on a platter that small!:uglyhammer:

My guess is that these are farm raised Chilean fish. The fillet was about 1 3/4# which would mean the fish was only about 6# or so.

I've never fished for steelhead but I'd like to be able to say I had. I'd likely acccept an invite someday if I was up that way.

We catch alot of em here in the great lakes, and they are alot of fun to catch. We fish for them almost all year, even in the winter aboard our covered , heated river boat!

Biggest I have ever caught was 17.7 lbs, I do have a 16 lber on my wall I caught with 6 lb test line in November.

If you ever think you can get up here Okie, let me know, we'll get ya out, bring a freind with ya!

Sounds like you may have a taker or two on that invite Dan. It may be next spring before I can make it, but if the invite is still good by then, you're on my agenda.
